These lessons are specifically designed for those who want to improve their kitchen and cooking skills.  Whether you are a complete beginner or reqire a refresher.

This is a great way to increase your confidence and cooking skills, pick up useful tips and improve your ability to produce some wonderful food for yourself, family and friends.

Each lesson is home based and takes about 4 hours.   

It’s a great way to have fun whilst widening your culinary skills at the same time. Please ask as many questions as you wish!  If there is something specific in mind that you would like to cook, we would be delighted to help

Lesson One – Knife Skills and Basic Sauce

Based around three knives and sharpening steel – A cook’s filleting knife, a preparation knife, a chopping knife. you can even try out our Victorenox knives.

The lesson begins with looking at sharpening techniques in order to get the perfect edge, what to look for when choosing a knife, and how to store knives correctly and safely.

We will demonstrate how to chop a variety of vegetables and produce in a safe and professional manner. Then it’s your turn to have a go to enhance your chopping skills...

Within this lesson, we will also show you how to make a smoked bacon, tomato and rosmary sauce ( reduction sauce,) a roux sauceand a veloute, which are a good base to many delicious sauces.

Chefs these days are using reductions, purees and emulsions more and more to make sauces but there are still a lot off sauces where  it is better to use a roux to build your sauce, which we will cover on your lesson.  

We will then finish off the lesson by cooking a chicken breast allowing you to sample a sauce you have prepared.  (This will be served with seasonal vegetables and a potato dish.

Lesson Two – Fish preparation and filleting.   

Fish is a popular, healthy and delicious dish, but if not cooked correctly, it can become dry and loose its moist texture .

In our lesson, we will show you how to fillet, descale and pinbone two different types of fish - a flat fish and a round fish, demonstrating how to do this easily, safely and skilfully.  Then it’s your turn!  

We will cook one of the fish to perfection using a method of pan frying and will also introduce you to a potato dish called champ, which is a excellent accompaniment to the fish dish we are going to make.  

In the lesson, we will also make a reduction sauce to compliment one of your fish (  Beurre Blanc Sauce ) # served with some delicious seasonal vegatables.

Lesson Three – Meat Cookery - Braising and Roasting

The leesons begins with explaining Braising and Roasting of different cuts of meat.

In this lesson, we will pan fry a Barbary duck breast, we will then finnish the cooking in the oven, let it rest, served pink and tender with a plum and coriander chutney, rocket and roasted sunflower seed, cauliflower salad.

We will also braise a lamb sholder in rosmay,lemon and garlic....delicious   

We will also try to help you understand the world of herbs, this will help to enhance and add flavour to different types of meat and poultry you want to cook in the future

Lesson Four – Desserts.

This lesson is perfect for those who have a sweet tooth and enjoy a good pud!

In the lesson, we will make a warm sticky toffee pudding with toffee sauce#  and a spiced pear creme brulee.#   

Lets not forget the fresh vanilla ice creamto go with the sticky toffee pudding....we will make that also...

The aim is to give you a good insight into a variety of methods of making different sweets. If, however, there is something specific that you would like to make, please let us know.

Please note that all these lessons are aimed at teaching you how to cook these dishes yourself and then you can reproduce them for your friends and family.
