Windsor, Upper Clatford and Staines Cookery Lessons
Some lessons this week around Middlesex, Hampshire and Surrey
We met up with Simon in Staines for a full days seafood cookery lesson, within this lesson we prepared made and presented five types of fish dishes, fish used included, local cod fillet, local mackerel, local sea bream, scallops and mussels. We also show him how to fillet and prepare the fish for cooking.
In addition, we created three different sauces including a red wine and caper sauce, lemon and chive and a mushroom, bacon and pea broth to compement the scallops. We also include a bamboo steamed fish in ginger, soya, chilli, coriander and lime with a teriyaki and ginger dressing.
Simon and i had a great day with lots of food ideas being tossed around,
We also met up with Hayden who cooks ever day and wanted to learn some new skills, we started with making pasta and then moved on to ravioli seved with a smoked bacon, mushroom and chive broth. Pan fried Monkfish wraped in Pancetta served with a Beurre Blanc Sauce and finnished off with a Citron Tart, Chantilly Cream.
Fun day lots of different foods to cook, Hayden was great to work with and was a very interesting person.

Everything was superb from the excellent fresh produce and ingredients you brought, together with all the utensils and equipment and the thought put into the dishes that we cooked with our sauces. Your teaching was most instructive and you made the cooking great fun for us both. We enjoyed your company and the end product of our cooking was absolutely delicious.
This was a 70th birthday present to us both from a friend and it was a great success.
